While meandering through the Hodag Farmers' Market last week I stopped and took a photo of Steve's beautiful beets. As we chatted he said he was quite surprised how many people didn't know the leaves were edible. I noticed that a long, long time ago. Through the years my boyfriend and I were constantly telling people about the delicious greens. We let customers know they could get two meals worth of veggies with one bunch of beets.
