Jacinto, who started Casa Mexicana on Lincoln Street, moved it into a larger location and then expanded that location, wanted to stay in his adopted community rather than try to duplicate his success in another town.
"I'm always looking to grow and expand," Jacinto said. "But my family is here, my kids and my wife are here, and I'd like to keep everything in this community."
Jacinto said Mad Subs will be operated with fresh as a key ingredient.
"We're trying to be convenient, fast and stand on three pillars of fresh baked bread, fresh cut meat and fresh cut vegetables. Those are the three pillars that we're always going to stand on," Jacinto said.
He said to start, the restaurant will have a limited menu of sandwiches.
"We're going to have 12 items, six being traditional and six being signatures. That way we can guarantee the consistency of each product," he explained. "We'd rather do a few things and do them well than do a whole bunch and be sloppy about it."
In addition to Japaneses Boba teas, Mad Subs will shy away from the traditional soft drink offerings to more healthy drinks such as juices.
"When we first made the (Facebook) post that we'd be opening, the number one request was that we be gluten-free," Jacinto said. "We heard and we listened and we put it on there (menu)."
Jacinto hopes to open Mad Subs on May 12, and will be open 7 days a week from 10 a.m. to 9 p.m.
