Now this Saturday, according to local weather reports, looks to be warm. Very warm. It'll be the kind of day where summer has been granted an extension. I liken this time of year to the old adage about waiting 5 minutes and the weather will change. We all know it doesn't really happen that fast but it does often change every few days.
There were a lot of pumpkins to be seen at the market last week and as the weeks go by there will be more and more and more. Pumpkins are part of the winter squash group. Acorn, butternut, butter cup, hubbard, and spaghetti squash are all winter squash. These kinds of vegetables don't need any kind of refrigeration to extend their shelf life, provided they haven't been cut or deeply scratched. The thick outer skin keeps the winter squash safe. That's why they are often used as seasonal decorations which later can (and should) be consumed. A vegetable that gives you more bang for your buck.
Most of us know you can dry or roast pumpkin seeds and eat them as a snack. Did you know you can also eat the seeds from all the other winter squashes? Yes, you can because they are all members of the same family. Now you might think there isn't a use for what I affectionately call "the slimy guts" of a winter squash and you'd be wrong. I've boiled it in water, strained, and used it as a vegetable broth. Now that's two more ways to extend your grocery dollar.
