Gardens flourish in August, leading to so much variety and abundance this time of year. Many tables were piled high with harvest.

I couldn't believe the amount of carrots there were last Saturday. As many of you know, I'm into preserving the harvest so I plan on buying a few bunches this Saturday to pressure can and dehydrate. I don't even care what color they are. I've canned up reds, yellows, and oranges all mixed together for a colorful side veggie at meals. The dehydrated ones will be first parboiled until almost translucent, dried and stored for later to be reconstituted then put into soups, stews, and casseroles.

I saw an abundance of Patty Pan last Saturday, too. They are a member of the summer squash family and are often overlooked when buying vegetables. They can be used like zucchinis. Another way to serve is to cut them in half horizontally, bake cut side up in a preheated oven at 350 until fork tender. Remove. Cool slightly and topped with a slice of fresh tomato, sprinkle with mozzarella, and fresh basil. Bake until the cheese melts. Yummy! Take it a step further and top with taco meat, salsa, cheese, and crumbled tortilla chips. These two recipe ideas can also be done on the grill.

One vendor had a really cute idea. He made up some vegetable gift baskets. Oftentimes a fruit basket is given as a hostess gift when visiting. Why not give something from the farmers' market as a gift. Maple syrup, jams, jellies, apple butter, salsa, relish, pickles and other items from the market could be included.

Vendors at the market also bring a lot of cut flowers made up into bouquets or sold by the stem. Gladiolus and sunflowers were seen last week as well as many other garden flowers.

Rest assured, all things I saw last week will be at the Hodag Farmers' Market this weekend, too. Come on down to Pioneer Park this Saturday between 8 a.m. and 1 p.m. and get vegetables for the week or stock up for canning and freezing, buy a lovely bouquet of flowers, pick up some barbeque sauce or other homemade goodies.
