Squash: The taste of fall

Squash: The taste of fall
Squash: The taste of fall

By Cassie Shefchik-

It's time, once again, for my favorite season! I adore fall with its riot of colors and cool, crisp air.

One day the temperature might be in the 80s another it'll reach 50ish. Autumn is a constant surprise keeping everyone in suspense from one day to the next, making life a real adventure. What's not to like about fall?

Fall colors are not just for the trees in our beautiful Northwoods but can also be found on vendor tables at the Hodag Farmers Market. Many hues of red, orange, yellow, green, purple, and brown can be found throughout the market with a sprinkling of white. Yes, all the lovely varieties of produce colors.

More items are showing up for seasonal decorating such as pumpkins, gourds, corn stalks, and chrysanthemums, to name a few.

Here's a little tip about chrysanthemums - always buy them when they are not fully open, regardless of where you buy them. You'll be able to enjoy their beauty much longer.

Another thing I like about fall is buying winter squash. Winter squash is another vegetable that came from the New World and was introduced to Europe by explorers long ago. Last week I had to get my hands on some acorn squash and make one of my favorite meals: Stuffed Squash. It's really easy to make. First, I baked the squash (cut in half with seeds removed) cut side down with a bit of water in a baking pan. I cooked up some rice. I also fried up some pork sausage (which a couple vendors sell at the market) and made a gravy with butter, flour, and chicken broth. I mixed the rice with the pork sausage, topped it with a nice mozzarella cheese and baked again. When I double the recipe I bake a few and freeze the rest. They're best if you use the frozen ones within a month.

Now I know I didn't show a concrete recipe but that's what happens when you have made the same thing throughout the years.

A quick internet search yields all kinds of recipes for stuffed acorn squash. Some add-ins include apples, onions, maple syrup, and mushrooms, all of which you can also buy at the farmers' market.

Come see us at the Hodag Farmers Market this Saturday at Pioneer Park from 8 a.m. to 1 p.m.
