Hodag Farmers Market report: A simple summer salad dressing
By Cassie Shefchik-
Monster burgers were basically hamburger mixed with some seasonings, sometimes an egg was added, and all the small pieces of potato chips left in the bottom of the bag(s). Mom would make a salad to go with the meal. If the previous evening or early morning was cool enough, she'd boil up some potatoes and eggs to later make into potato salad. If the loose leaf lettuce was ready for picking in the garden she'd whip up a simple salad dressing and mix it with the roughly ripped fresh-from-the-garden lettuce.
The salad dressing was easily made with things already on hand. It's a recipe that's been passed down through the ages. It's versatile and can be used in many different ways. It can be used in cabbage slaw. I recall thinly sliced cucumbers mixed with the salad dressing. I've seen fresh broccoli florets, crispy bacon and raw onion blended together with the homemade dressing.
Last week, when the temperatures soared, I bought some fresh lettuce. The big, beautiful, thick green leaves were harvested on the stalk. The huge "bouquet" of lettuce was bigger than my head! I ripped the lettuce into 2" x 2" pieces, sliced one apple into very thin wedges, and thinly sliced 1/4 of an onion.
Then I added the home made dressing. Delicious!
Salad Dressing
1 cup salad dressing (like Miracle Whip)
1/2 teaspoon salt
1 tablespoon sugar
1 tablespoon vinegar
2 tablespoons milk
Mix all ingredients together, pour over vegetables, toss to coat, and refrigerate. Adjust recipe to taste. Other add-ins could be: celery seed, caraway seed, fresh ground pepper.
Cucumbers have been seen at the Hodag Farmers Market as well as carrots and beets. Many flowering perennial plants have also been arriving. Perennials from the vendors have been grown here and, if they are transplanted correctly, will give the buyer years of garden beauty.
Come see what else is new at the Hodag Farmers Market at Pioneer Park this Saturday from 8 a.m. until 1 p.m.
